Input & Output Definitions

Input Parameters

  • Recipe Egg Count: Number of eggs in recipe.
  • Original Size: Standard Large (50g without shell / 57g in shell).
  • Your Egg Size: Medium (44g), XL (56g), Jumbo (63g without shell).

Calculated Outputs

  • Total Liquid Egg (g): Mass of egg required.
  • Recommended Count: Whole eggs plus optional extra yolk/white.

Worked Culinary Example

Scenario: A cake recipe calls for 4 Large eggs (200g liquid egg), but you only have Medium eggs (44g liquid egg).

  1. Total liquid egg needed = 4 × 50g = 200 grams.
  2. Medium eggs needed = 200g ÷ 44g = 4.54 eggs.
Result: Use 4 Medium eggs plus 1 whisked egg white (or 5 Medium eggs lightly beaten with 20g removed).

Common Kitchen Mistakes to Avoid

Ignoring egg sizes in delicate custards

Using 4 Jumbo eggs instead of 4 Large eggs adds 52 grams of liquid (~1/4 cup), ruining sponge cakes and custards.
